I purchased a focaccia-type thing at the store today - two pieces of bread with fresh mozarella and tomatoes and pesto in between. There are cooking directions to make it a grilled sandwich, but I don't have a foreman grill or skillet pan or anything like that. How would you suggest I go about this?

do you have a toaster oven? its not exactly the same, but at least its warm and cooked and crispy.

..technically a regular oven would work too. now that i think about it.

and oh yeah. except for the part about how i dont really like intact tomatoes, that sounds DELICIOUS.

Do you want to make a pressed sandwich or just toast it?

Pressed:
No frying pan or cast iron skillet? Two bricks wrapped in aluminum foil heated in your oven for a while, then put the sammitch on one brick and top with the other brick. And be careful, they're, uh, hot.

Or if you have some kind of cooking vessel, get it hot, put in the sammitch, then put a brick on top to flatten and cook.
